Whether your baking for yourself or for friends, blueberry coffee cake is a great go-to breakfast treat.

 

What you’ll need

Cake

¾ cup of granulated sugar
¼ cup of softened, unsalted butter
1 egg
½ cup of milk (fat or non-fat)
2 cups of four
2 tsp. of baking powder
½ tsp. of salt
1 pint of fresh blueberries

Topping

½ tsp. of cinnamon
¼ cup of brown sugar (light)
¼ cup of granulated sugar
¼ cup of softened, unsalted butter
1/3 cup of flour

What to do

Step One

Preheat your oven to 350°F. Flour or grease a 8”x8” baking pan and set aside.

Step Two

Using a mixer, combine butter and sugar until creamy. Gradually add in egg, milk, flour, baking powder and salt.

Step Three

With a spatula, fold the blueberries into the batter.

Step Four

Add the batter to the pan.

Step Five

Mix the topping ingredients, and sprinkle crumbly mixture on top of the batter.

Step Six

Bake 45-50 minutes and dig in! Ideally enjoy together with one of our delicious Gourmesso coffees.
