Living a vegan lifestyle is very rewarding, but finding vegan desserts can often be a challenge. This week, Gourmesso brings you an easy, vegan-friendly, dessert that is sure to satisfy those sweet cravings.
What you’ll need
3 cups of flour
1 cup of brown sugar
1 tsp. cinnamon
½ tsp. allspice
¾ tsp. nutmeg
¾ cup of organic coconut oil (melted)
½ cup of chopped pecans or walnuts (optional)
3 tsps. baking powder
1 ¼ cups of soy milk
½ cup of raisins (optional)
How it’s done
Preheat your oven to 375 degrees.
Combine flour, allspice, nutmeg, cinnamon, coconut oil and nuts. The result should be crumbly. You will need one cup of this mixture for the topping.
Use the remaining mixture to mix it with baking powder, soy milk and raisins.
Pour the mixture into a greased cake pan. Add the topping evenly over it. Be aware that the mixture will rise while baking.
Bake it for 30 minutes. Let the cake cool for another 30 minutes before removing it from the baking pan.
