Greek Yogurt Coffee Cake Recipe

A combination of Greek yogurt and an aromatic coffee filling that gives the cake a unique and delicious taste. The fresh cheese glaze gives the cake the perfect finish and makes it a favorite at the next family celebration! This recipe is perfect for all celebrations, it can be served for the most diverse breakfast and brunch events.

Fun-Fact: Through a special manufacturing process, Greek yogurt is carbohydrate-rich and protein-rich than normal yogurt and is therefore particularly popular with athletes.

 Ingredients

  • 12 tbsp unsalted butter (room temperature)
  • 300g sugar
  • 3 large eggs
  • 1 ½ tsp vanilla flavor
  • 250g Greek natural yogurt
  • 325g flour
  • 2 tbsp dining room
  • 3 tsp of baking soda
  • ½ tsp salt

For the filling

  • 80g light brown sugar
  • 150g flour
  • ¼ tsp salt
  • 4 tbsp unsalted butter

For the glaze

  • 85g cream cheese
  • 2 tbsp butter, (room temperature)
  • ⅔ cups of icing sugar
  • ¼ tsp vanilla
  • 3 tbsp of milk (or enough to create a glaze-like consistency)

 

Directions

Preheat the oven to 180° C and prepare the mold with grease and flour.

Beat butter and sugar for 4-5 minutes in a creamy bowl to a mass. Then stir the eggs, vanilla extract and the Greek yogurt and combine with the mass. In a separate bowl, mix the baking powder, flour  and salt.

For the filling, add the brown sugar, baking powder, espresso, butter and the salt in a bowl and mix it with the hands until it becomes a fluffy mass.

Place half the dough into the mold and sprinkle it evenly with half of its filling. Add the rest of the dough, then distribute the remaining filling as a topping on the surface of the cake and allow it to bake in the oven for 50-60 minutes.

While the cake is cooling down, prepare the glaze. To this end, first mix butter and fresh cheese to a soft mass. Slowly add powdered sugar, vanilla extract and milk and stir until a creamy glaze-like mass is formed, which can then easily be passed over the cooled cake.
