Vegan Walnut Coffee Cake with a delicious touch of Gourmesso Coffee

As we are nuts for this cake! A combination of walnuts with sweet bananas and the aroma of delicious coffee. This stunning vegan walnut cake is a real palate, not just for lovers of the vegan cuisine but for everyone that has a good taste! This cake can be served as a dessert, but also for a delicious breakfast accompanied by a cup of coffee.

Ingredients

  • 2 bananas, peeled and crushed with a fork
  • 300g Walnuts, ground
  • 160g spelled flour
  • 70ml coffee
  • 60ml milk (everything except cow’s milk)
  • 6 tbsp maple syrup
  • 3 tbsp of coconut oil
  • 2 tbsp linseed, ground
  • 6 tbsp of water
  • 3 ½ tspn baking soda
  • ½ tsp salt
  • ½ vanillin powder
  • 50g walnuts, roughly chopped + 3EL coconut sugar

Directions

Preheat the oven to approx. 180 ° C and lay baking paper on an extended tray (approx. 23cm). Mix the linseed in a bowl with water and leave it to stand for 6-8 minutes until a thick consistency is obtained.

Spelled flour, ground walnuts, baking powder, vanillin powder and salt are put together in a bowl and stirred together. A further bowl is then used to stir milk, coffee, coconut oil, maple syrup and the crushed bananas. Subsequently, the linseed is added and stirred until finally everything is added to the mass of flour, walnuts and baking powder. Mix them all until the dough is formed.

Now pour the dough evenly into the mold and sprinkle the surface with the remaining walnuts and the coconut sugar. Now the cake needs only about 60 minutes. Bake at 180 ° C. When removing, verify with the rod test. However, the cake can be very moist due to the bananas and the coffee. Finally let it cool down and enjoy!
