Seductive Cranberry Pancakes with a touch of luscious Coffee Liqueur

What is the first thing you associate cranberries with when it pops up in your head? Exactly, it is the American blueberries which are often used for baking. Today, we would like you to move to a special pancake.
Fun-Fact: What is the Cranberry and what can the berry do? They are rightly known for their great healing effects. In the USA and Canada, they are well known between the native people. In Germany, the Cranberry is known as a culture coupler. The red berry is also an absolute power package and rightly belongs to the new class of “Superfoods”.

Servings: 10-12 Pancakes
- 3 eggs
- 1 pinch of salt
- 3 El sugar
- 0.25 cup flour
- 50ml of milk
- 2 tablespoons dried cranberries (chopped)
Ingredients Coffee Liqueur
- 300 ml of coffee (Lungo Latino Mezzo of Gourmesso)
- 0.85 cup of sugar
- 2 star anise
➊ Use and agitator to stir 2 egg whites and 1 pinch of salt. Slowly add the sugar and stir for another 2 minutes, until the egg whites are very stiff and shiny. Refrigerate.
➋ Add flour, 2 egg yolks, 1 egg and the milk to the smooth dough. Remove the ice cream.
➌ Heat some oil in a coated pan. Add small portions of the pastry, a tsp of chopped crannberries and spread them, bake small pancakes over medium heat.
➍ Bring the coffee, sugar and star anise to a boil in a saucepan and cook over medium heat for 20-25 minutes in a syrup-like manner.
➎ Allow to cool and place it in a tightly closed bottle.
Tip: The pancakes can be served well in the afternoon with the coffee syrup.
