Easy Waffles Recipe with Espresso Coffee and Cottage Cheese

A classic Waffle Recipe that will give you the perfect Crispy breakfast

A Waffle that makes your heart skip a beat.

Feeling the need to spicen up your afternoons? The basic equipment for a fantastic recipe should already be in your household – Quark, Flour and Espresso. Borrow two eggs from your lovely neighbor and  give them a delightful combo in return.

Fun-Fact: This is perhaps also one of the reasons why the Waffle has been accompanying us for many centuries. However, the exact origin of the crispy pastry is still not fully understood. Even the brothers Grimm could only conjecture in their German dictionary and describe the wafer as a flat, square-shaped pastry with diamond-shaped indentations on both sides.

Total time: 25min

Prep time: 15min; Cook time: 10min

Difficulty: Easy

Servings: 6-8 Waffles

Ingredients

  • 2 eggs
  • 0.25 cup of sugar
  • 1 pack vanilla sugar
  • 0.42 cup of cottage cheese
  • 0.85 cup flour
  • 2 tsp of baked baking powder
  • 50ml whipped cream
  • 100ml Honduras Pura Forte Espresso from Gourmesso

Directions

Boil and cool an espresso or strong coffee. In a bowl, stir eggs, sugar, vanilla sugar as well as curd. Leave it to rest for 30 minutes.

Then mix the flour with the baking soda alternatively with the cream and the espresso until it becomes a liquid dough

Use a well greased waffle iron and bake around 6 – 8 waffles and then dust it with powdered sugar.

Tip: For a vanilla ice cream and whipped cream taste, you can also replace 20ml of espresso with coffee.

Finished. Enjoy!

We drink a lot of coffee. So much, in fact, that coffee is the world’s second most tradable commodity (oil is the first). Keeping that in mind, coffee is produced on a massive scale in some of the most fragile ecosystems, by farmers who often don’t make a fair, or even just, amount of profit for their labor
