Delicious Walnut Coffee Cake for the perfect dessert!

Welcome to our feast! A recipe for a stunning Walnut Coffee Cake.

This delicious and yet very simple recipe is a ideal for back-novices, who nevertheless want to make a wonderfully fresh and juicy vegan walnut cake, with a light coffee aroma. The cake is perfect for a sweet dessert and can be served with whipped cream and a delicious cup of coffee.

Fun-Fact: Small, healthy side effect: The walnut is a nut which brings a lot of health, but also contains a lot of fat. But this fat is very healthy and can be enjoyed without a bad conscience. It lowers, for example, the cholesterol level.

Ingredients

  • 100ml espresso or strong coffee
  • 50ml of coffee cream
  • 300g walnuts, finely chopped
  • 125g butter, room temperature
  • 180g sugar (at best, cane sugar)
  • 3 eggs
  • 125 g flour

 

Directions

 Preheat the oven to 180 ° C. At the beginning, the finely chopped walnuts are lightly roasted in a pan without fat until they begin to smell. Then add about 30g of sugar until it becomes lighlty caramelize.

 Now stir the butter with the hand mixer until becomes creamy, add the remaining 150g of sugar and continue stirring until the sugar is dissolved. Then separate the eggs and mix only the egg yolk. In addition, mix the flour, walnuts and the coffee with the liqueur. The egg whites are stiffly struck and the dough is sublime until everything is mixed to a creamy consistency.

Finally, place everything in a small jumping mold (ca.22cm) and let the coffee-nut cake bake at 180 ° C for about 50 minutes. With a rod test you can check when it is finished! Have fun!
